About Jennifer

Jennifer Cofer is from Jackson, Mississippi and currently lives in Houston, Texas. As a woman, who is pursuing a life pleasing to the Lord, her life’s calling has been in public health, public policy and tobacco control. The past five years, she has served in an executive administration capacity at a cancer center, leading a tobacco control program. She previously worked in the non-profit public health sector for 15 years after receiving a Bachelors of Science in Healthcare Administration and a Masters of Public Health from the University of Southern Mississippi. She is currently pursuing a doctorate of Public Health at UTHealth Houston. Her work & passion lies mostly within public health, tobacco control policy, advocacy and health education.

Jennifer values her family, especially being an AUNT! Her father has been a minister her entire life and her mom is a teacher. They reside in Mississippi. She has an older sister, Elisabeth who is married to Jeremy with 2 boys, Campbell and Hudson residing in TN. She has 2 younger brothers. Paul lives in AL, married to Christy with 2 children, Grace and Thomas. And Stephen, married to Amber, living in TN, with a son, Lawton.

Jennifer has led a life of service and volunteerism as an adult. She served as a missionary intern at We Will Go ministries in Jackson, MS from 2010-2012, which had a profound impact on how she lived out her Christian life as an adult and encountered people. Prior to those years, she led multiple youth trips, camp retreats, church softball teams, and taught Sunday school, etc.

Having played softball since she was a young child up until a few years in college, Jennifer found teaching the mechanics and basics of fast-pitch softball was rewarding. While coaching pitchers, she also served as a fast pitch softball coach for girls in middle and high school and select travel ball for 8 years.

Jennifer has run 12 half marathons in Nashville (twice), Chicago (twice), Pensacola, New Orleans (three times), Jackson, Houston’s bay area, Brooklyn, San Antonio, as well as many 10Ks and building stair climbs. She’s become a Peloton fanatic, with over 1,000 workouts in 3 years on the bike, tread, and outdoors.

Jennifer enjoys traveling to new cities (not during a global pandemic, obviously), visiting friends, and adventures outdoors with her dog, Lucy.

These blogs will be various in nature; new city, new workplace, family, running, sports, coaching, faith, spiritual journey, physical fitness or about traveling (or the lack of, during a global pandemic). Don’t waste a day of your life. You have a purpose and reason to live during this time on Earth.  And there’s so much more your Creator has in store for you.
